Baked Potato Bar ~ From Vegetate, Vegan Cooking & Food Blog

Maybe it has something to do with my Irish roots, but I LOVE potatoes! My husband Keith and I decided to put our homegrown red potatoes to the test via a vegan baked potato bar, and they definitely passed!

We baked our potatoes, broiled some Daiya vegan mozzarella shreds on top and added dairy-free butter, roasted broccoli, fried smoky tempeh bacon, ground black pepper, and my favorite sour cream substitute, Joanne Stepaniak’s Sour Dressing recipe from Vegan Deli, page 123.

Keith claimed he’d already had more than his share of baked potatoes during his college years, since as a vegetarian that’s about all he had to choose from at his school’s cafeteria, but he couldn’t get enough of our baked potato bar!

Potato Facts: The potato is was first domesticated by the Andeans of South America at around 500 B.C., and the Inca grew thousands of varieties of potatoes.

  1. What a great idea! My husband loves potatoes, so this would be a great idea for a fun meal for us. Our market has had some delicious white sweet potatoes lately :) Do you concur w/ the reviews that the LightLife Smoky tempeh sticks are really good? I use that brand of regular tempeh and love it, but usually shy away from “vegan meats.”

    • Hi Hearthomemade! Thank you for your lovely comments. :) White sweet potatoes sound amazing! I have to say that I really, really love LightLife’s Smoky Tempeh Strips. Because they are made from tempeh they are much more healthful than wheat or processed soy-based vegan meats, and they’re 100% organic. I like mine cooked very well done in a cast iron skillet with some olive oil, yum! By the way, I just want to say here that I don’t receive any type of compensation from any of the products that I mention in my posts. I just like to write about exactly what we use in each dish, and to raise awareness of vegan product options and substitutions to those who might not know about them.
