Sweet and Sour Smoked Tofu ~ From Vegetate, Vegan Cooking & Food Blog

I loooove good Chinese food and this Sweet and Sour Smoked Tofu recipe From Kathy Hester’s wonderful cookbook The Vegan Slow Cooker (page 118) delivered.

Brimming with smoky tofu, pineapple, bell peppers, onion, broccoli, and a thick sweet and sour glaze, this was just right for lunches this week. It was delicious served over brown rice.

Sweet and Sour Pork Fact: Sweet and Sour Pork originated in Canton in the 1700s. Why not try this smoked tofu version instead? It’s saturated fat and cholesterol-free, and pig-friendly. ;)

      The glaze is gluten-free and made from pineapple juice, soy sauce, fresh ginger, corn starch (but I’m sure you could substitute arrowroot powder for this if desired), and water. It’s a pretty simple but tasty sauce! :) I would just add the recipe here but since it was developed and published by Kathy Hester I (understandably) can’t do so without committing copyright infringement, but… I am hoping to hone my cooking skills enough to be able to publish my own cookbook one day. :) Thanks again HSD, and I hope you’re doing great!

Now THAT is a sign of an excellent cook. :) Thank you for your nice comment about my photos. Upgrading from a point-and-shoot to a DSLR recently certainly didn’t hurt. ;)
